French Toast

This is my very own twist on a classic
4 large eggs
1/4 t. cinnamon
1 t. vanilla
2 T. pureed strawberries
6-8 slices of bread
Flaxseed meal (optional)
Syrup, powdered sugar, fresh fruit
In a shallow bowl whisk eggs, strawberries, vanilla and cinnamon. Soak the bread, you know the drill.
Coat your griddle with cooking spray and set over medium heat. When I place the bread on the griddle I sprinkle the flaxseed on the moist side. (You can skip the flaxseed if you wish, I try to add flaxseed to a lot of my recipes, due to the health benefits, but you won't notice if it's missing)
I used the rest of my strawberry puree as the syrup and added fresh fruit on top. Mason likes his with syrup and powdered sugar.
