Mac N' Cheese: The Healthy Version

I realize you don't find my kid's messy face an appetizing introduction to a tasty meal, but I hate when someone gives me a "healthy" recipe and after one bite you realize, ya... this is low-fat. So, I thought I'd provide evidence that your kid will actually enjoy it, and you just might too.
p.s. Milly's nap hair? Does she sleep directly on her head?
This recipe originates from Jessica Seinfield's Deceptively Delicious although I have made some adjustments of my own.
For the Recipe

1 1/2 cups of your favorite noodles (I used rigatoni)
nonstick cooking spray
1 tablespoon olive oil
1 tablespoon all-purpose flour
1/2 cup skim milk
1/2 cup cauliflower puree
1 1/2 cups shredded cheddar cheese
1/4 cup non-fat sour cream
1/2 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon pepper

1) Cook noodles according to package directions until al dente and drain.
2) While noodles are cooking coat a saucepan with cooking spray and heat over medium. Add the oil, then the flour, stir constantly until mixture turns into thick paste but not browned.
3) Add the milk and cook, stirring occasionally until mixture thickens. Add the veggie puree, cheddar, and seasonings until the cheese is melted and sauce is smooth. Stir in the noodles and serve warm.
